Ingredients
• 1 medium cauliflower, leaves discarded, cut into florets
• 1 smalll onion, finely chopped
• 1 clove garlic
• 1 teaspoon whole mustard seeds
• 1/2 teaspoon cumin seed, roughly pounded
• 1/2 teaspoon coriander seeds, roughly pounded
• 1/3 teaspoon turmeric
• 2 cups coconut milk
• 1/2 lemon, juice extracted
• coriander leaf, chopped
• vegetable oil
• Salt
Method
Heat a little oil in the pan and when it's hot, throw in the mustard seeds and a few seconds later, the chopped onion and pounded cumin and coriander seeds. Stir and lift the pan off the heat if it seems a bit too hot. After a few minutes of cooking, add the cauliflower florets and stir till they're covered in oil, seeds etc. Fry for a few minutes more, then add the coconut milk, turmeric and salt. Bring to the boil then turn the heat down a little and cover the pan. Simmer until the cauliflower is soft enough to stick a fork in but not falling apart. Add the lemon juice and green corriander at the end of cooking time.

This is quite similar to my coconut cauliflower recipe. I think it's quicker and easier to prepare, but maybe I'm just imagining things. I certainly planned it as a quick dish. I made it on a day when I was decorating my flat. I find that painting always takes longer than predicted and, as usual I was finishing the last wee bit when I should have been well into cooking the evening meal. I also find that painting is much more difficult with long hair. I was trying to paint a hard-to-reach pipe in the corner of the bathroom and I couldn't figure out how the paint was getting onto the tiles beside my head. Then I realised my hair had been getting into the paint pot. That added a good few minutes onto the whole process, by the time I had cleaned the tiles.
Luckily, on that day, like on most days in our house, there were some left overs in the fridge. I found some dhal, boiled rice and spicy potatoes. There was also a large piece of raw cauliflower and I thought I could do something with that while the other things were heating up. I did, and that's why I think this is a quick recipe.
The lemon is not so suitable for children, give a sour tsaste with the coconut. But, it's great.
